Baked Okra with Potatoes – two of my favourites come together to satisfy my palate and my hunger!!! Try it – it’s sooooo good!!!
Greek Baked Okra & Potatoes in Red Sauce Recipe
- ¼ cup cup extra virgin olive oil ((EVOO) and more for drizzling)
- 2 medium brown onions, (diced)
- 1 kg desirée potatoes, skin on, (cut into large cubes)
- 3 cloves cloves garlic, (crushed)
- 1-2 tsp cracked black pepper
- 2 tsp salt
- Dried chillies, (to taste)
- 675 ml passata
- ½ bunch parsley, (chopped)
- 750 g okra, (prepped)
Preparing the okra

Using a paring knife, make an angled incision into the okra just below the visible line that separates the stalk from the fruit – continue cutting around the okra to form a conical pyramid at the top of the okra (see Okra 101 video for prep guide)
Preparing the baked okra and potatoes

In a large baking dish, sauté the brown onions in the EVOO till they are translucent

Add the potatoes and sauté till they just begin to brown

Add the garlic and sauté briefly

Add the pepper, salt, dried chillies and stir through

Add the passata and parsley, stir through and simmer briefly

Add the okra and coat them in the pan juices

Place a sheet of vented foil on top of the baking dish

Transferbaking dish to an oven preheated to 180°C fan-forced and bake for 1 hour

Removethe foil, drizzle generously with EVOO and return to the oven for 15 minutesmore

Removefrom the oven and allow to cool a little
Serving the baked okra and potatoes

Drizzle with some EVOO beforeserving and enjoy as a meze, light meal or as side to some barbecued meat. KaliOrexi!
