
Our 5th offering for “Starting your Day the Greek Way” is the Cycladic Pizza: LADENIA – which is shared by Fofi @fofimeli from the family of @ladi_biosas.
“Ladenia is considered to be the oldest recipe for Pizza! It gets its name, ‘Ladenia’, from the olive oil used for the preparation and whose flavour dominates. Ladenia is a local taste of Kimolos, a small volcanic mountainous Greek island in the Aegean Sea.” Fofi

Fofi's Ladenia
Ingredients
For the dough you will need…
- 250 ml lukewarm water
- 7 g dry yeast
- 1 tbs sugar
- 1 tsp sea salt
- 1 tbsp Ladi Biosas Organic Extra Virgin Olive Oil (EVOO)
- 500 g all-purpose flour
For the topping you will need…
- 300 g mini-roma or cherry tomatoes, cut into thin rounds
- 2 large red onions, cut into thin rounds
- 1 tsp Greek oregano
- 1 tbsp sugar
- 1 tbsp vinegar
- 50 ml Ladi Biosas Organic EVOO to baste the baking pan
- 50 ml Ladi Biosas Organic EVOO to drizzle the Ladenia
Instructions
Preparing the Ladenia

To make the dough, add the water, yeast, sugar, salt and EVOO to a bowl - mix well

Gradually add the flour, mixing to form a dough. Knead the dough until it is smooth and even in texture

Form the dough into a ball, put it in a clean bowl and cover it with cling wrap

Leave it in a warm place for 30 minutes – until the dough doubles in size

For the topping, add the tomatoes, onions, Greek oregano, sugar, vinegar and EVOO to another bowl

VERY GENTLY toss all the ingredients (you do not want the tomatoes to release their juices)

Baste a baking pan (~30cm x 20.5cm) with EVOO

Place the dough into the pan

Gently press the dough with your fingers so that it spreads to the edges of the pan

Spread the tomato and onion slices on top

Drizzle the top of the Ladenia with EVOO

Bake in a preheated oven at 180°C fan-forced for 20 minutes
Serving the Ladenia

Serve the Ladenia for any meal!
